At Wine Collectors, what’s in the glass and what’s on the plate are never a random pairing. Our sommelier helps you choose the wine, while at the stove Edmondo Vingris decides what lands on the plate. Pots and pans clatter in the kitchen, and every now and then a little chaos slips in. That bustle is often where new ideas and flavour combinations are born.

Edmondo cooks with joy and curiosity. There is room for improvisation in his kitchen, but it is rooted in experience, not chance. That same spirit runs through Wine Collectors: friendly, upbeat and relaxed.

Wine Collectors is a wine bistro where food isn’t decoration, but an ally to the wine. Both food and wine should be good on their own and even better together. Our warm and cold small plates change with the seasons and are always created with wine in mind.
